PB&J's For Days*

My boyfriend, and ever patient taste-tester, had a birthday a few weeks ago.



I asked what he wanted for a birthday dessert, and it was "something with peanut butter." I know the first thing I thought of was a PB&J, and that's all she wrote. 

My Mother (Seriously, check out her blog) had just given me a jar of her homemade Triple-Berry Jam (I told you I love berries). I made these Crunchy Peanut Butter SweetCakes with Peanut butter and Triple-Berry Jam Frosting. HOLY YUM!


Blackberry Goodness*

I love berries. Seriously, I eat some sort of berry almost daily.
So, when I came across some amazing blackberries at the store the other day, 
I knew I had to make something special with them.
I wanted the blackberries to be the focus, and they totally were!

 Blackberry Cornmeal Teacakes.




They turned out to be one of my all-time favorites!

Chocolate Dreams*

I'm not going to lie, I really don't love chocolate cake or cupcakes. I would much rather have a bar of Endangered Species Dark Chocolate with Raspberries than a slice of chocolate cake.

But, I made these bad boys for a cocktail party and they were so delicious!
Dark Chocolate SweetCakes with Very Vanilla "Golden" Frosting and Gold Sprinkles. Each SweetCake had its own golden liner and snowflake placemat.
They were really elegant and I even had a few people ask for the recipe! Woo!

Just keep swimming*

I just recently made a delicious bath of Sweetcakes for one of my best friend's birthday. She was having a small get together at her new house so I wanted to make something fun, quirky and special, because that's exactly how she is. Happy (belated*) Birthday Sara! 


These were Vanilla-Flax Sweetcakes with either Vanilla-Almond Frosting or Dark Chocolate-Almond Frosting and Graham Cracker "Sand."

I had so much fun with these, and they turned out so yummy!

Bon Appetit*

Hello, and welcome to SweetCakes! My name is Gabi and I'm 22 years old. I live in Central Florida and I have five cats and two dogs (all of whom I've rescued). I love to surf (although, I'm not very good), long board, read, swim and rescue animals. Most importantly, I'm a vegan sweetcake connoisseur!  :)



I've always had a passion for baking. I remember as a child, putting on my Mother or Mimi's apron and baking with them. At that point, I think I was making a mess and eating batter or dough more than baking, but it planted a seed for me.

Fast forward to May 2008, I was 18 years old and had just graduated high school. This is when I decided to become a vegan, and I haven't looked back since. Once I became vegan, I always wanted to surprise people with how good vegan food is (No, I don't just eat twigs and berries. I promise)! What better way to get people to try icky, scary vegan food than with sweets? Thankfully, most people have enjoyed my creations, though skeptical at first. 

After much, much encouragement from my boyfriend, Nick, my parents and his parents, I decided to make a little side business selling my treats. That lead me to start this blog site, and I hope you all enjoy it as much as I enjoy making them.

The first treats I'll share with you are from about a month ago. My little (he's actually not little at all anymore) brother turned thirteen in the beginning of December so I wanted to make him something special. He's an avid golfer, and he's great too!


So I made my Very-Vanilla SweetCakes and topped them with a bit of my Vanilla Soy Frosting and decorated them like a miniature course! Everyone enjoyed them, but my brother said they were amazing, and that's what matters!
